Summary of Position

Prepares menu items according to company policies, procedures, and standards. Maintains food costs and kitchen cleanliness. Performs duties to maximize guest satisfaction and a positive work environment under the guidance of the Kitchen Manager or Manager on Duty.

Position Activities and Tasks

1. Prepares Cooking Items: Reports well-groomed, in proper uniform, practicing good hygiene. Uses, maintains, and cleans all kitchen equipment and preparation/storage areas. Stocks and rotates products ensuring shelf life standards. Knows recipes and prep procedures for correct portioning and quality. Prepares prep items per guest requests following safety and sanitation standards.
2. Controls Food Cost: Ensures accurate portioning and recipe adherence. Uses FIFO standards in preparation.
3. Maintains Cleanliness: Keeps kitchen, prep areas, coolers, and storage clean. Follows safety policies for handling, rotation, and storage. Conducts line sweeps and cleans equipment as directed. Understands OSHA and health department standards.
4. Assists with Operations: Communicates issues to management, assists team members with prep and dishwashing, supports front of house cleanliness, and provides guest service.

Physical Requirements and Working Conditions

Extensive standing/walking, ability to see clearly at various distances, communicate effectively, exposure to heat, steam, cold, and chemicals. Reaching, bending, lifting up to 50 pounds, and working irregular hours during busy times.

Supervision and Skills

Receives training from management. Basic sanitation, safety, and customer service skills can be learned in-house. No prior experience required.
