Job summary

Zuma Restaurants is seeking a Director of Operations to oversee the regional performance of Zuma outlets in North America, including Miami, NY, Las Vegas, and Boston. You will partner with General Managers and Executive Chefs to drive top-line growth, guest satisfaction, and operational excellence while upholding Zuma standards.

You will lead a team of regional leaders, manage budgets, forecasts, and staffing, and travel frequently to sites to ensure consistency and quality across locations.

Qualifications

• 7+ years of progressive restaurant operations leadership experience with multi-unit or regional oversight.
• Proven experience leading General Managers and senior restaurant leadership across multiple locations.
• Strong understanding of restaurant operations, guest experience, labor costs, budgeting, forecasting, and P&L.
• Ability to travel frequently across the region and work a flexible schedule.
• Excellent leadership and team development skills.
• Passion for Japanese cuisine and culinary experiences.

Responsibilities

• Oversee and support day-to-day operations region-wide, ensuring brand standards.
• Partner with GMs and Executive Chefs to drive performance and provide hands-on operational support as needed.
• Monitor financial and operational performance, including revenue, labor, COGS, profitability, and KPIs.
• Develop and execute annual budgets, forecasts, business plans, and strategies to achieve financial targets.
• Conduct site visits and operational reviews to evaluate service and guest experience.
• Lead, coach, and develop General Managers and senior restaurant leadership across locations.
• Ensure consistent SOPs and policy implementation across all locations.
• Identify opportunities to improve efficiency and profitability and implement action plans.
• Collaborate with Culinary, People & Culture, Finance, Talent Acquisition, Marketing, Events as needed.
