Job description

The Commissary Production Hourly Manager is responsible for managing the daily operations of our commissary kitchen. This includes supervising production, maintaining quality and consistency, managing inventory and prep schedules, and ensuring all food safety and sanitation standards are met. The ideal candidate will have experience in high-volume food prep, strong leadership skills, and a commitment to efficiency and excellence.

Key Responsibilities
  • Oversee daily food production and portioning for multiple restaurant concepts
  • Manage and train commissary kitchen staff to ensure efficient and consistent workflow
  • Monitor food quality and ensure adherence to recipes and portion standards
  • Coordinate production schedules based on restaurant needs and delivery timelines
  • Maintain cleanliness and organization of the commissary according to health and safety regulations
  • Conduct inventory checks and assist with ordering supplies and ingredients
  • Track prep and production logs and communicate with restaurant chefs and managers to forecast needs
  • Ensure all equipment is maintained and functioning properly
  • Help build and maintain a positive, team-oriented work environment
Qualifications
  • 2+ years of experience in a high-volume kitchen or commissary environment, with supervisory responsibilities
  • Strong understanding of kitchen operations, production workflows, and food safety standards
  • Excellent time management and organizational skills
  • Ability to lead and motivate a team
  • ServSafe Certification
  • Able to lift 50 lbs, stand for extended periods, and work in a fast-paced environment
  • Reliable transportation and punctuality
