Job summary

dnata Catering is seeking a Production Clerk to support the aviation catering production line. You will monitor CCP logs, uphold HACCP standards, and maintain a clean, safe production area while collaborating with production and QA teams.

The role requires attention to detail, ability to handle a heavy workload, and flexibility to work varied shifts including nights, weekends, and holidays. Indoor work environment with safety protocols in place.

Qualifications

• Knowledge of HACCP principles and food safety standards.
• Formal training in food safety and regulatory compliance preferred.
• Strong attention to detail and highly organized.
• Able to manage a heavy workload and meet deadlines.
• Experience monitoring and controlling wastage.
• Flexibility to work nights, weekends and holidays.
• Ability to work independently and in a team.
• Strong prioritization and multitasking skills.

Responsibilities

• Support HACCP program in hot and cold kitchen operations.
• Monitor CCP logs in Hot/Cold Kitchen.
• Verify hot kitchen coolers meet HACCP requirements.
• Ensure proper cooling processes for cooked items.
• Confirm final cooking temperatures meet safety standards.
• Maintain production labels with correct identification and color-coding.
• Support QA processes in Hot/Cold Kitchen.
• Perform additional duties as assigned by management.
