Responsibilities

• Lead prisoner kitchen teams in meal production for approximately 500 individuals per meal, including main and satellite kitchens.
• Maintain security and control of prisoners while ensuring safety protocols and institutional policies.
• Prepare and verify special diets (vegetarian, diabetic, allergy-conscious, religious, medically prescribed).
• Oversee production and preparation of bakery items served at the facility.
• Ensure ingredients match planned menus and supervise serving process.
