Job summary

Highgate Hotels in San Francisco, CA, seeks a Prep Cook to prepare all food items for Restaurants, Room Service, Employee Cafeteria and Banquets, following standardized recipes while ensuring cleanliness, sanitation, and safety in the kitchen. You will minimize waste and maximize cost/production ratios, and support any kitchen position when needed.

The role requires culinary experience, flexibility for long hours, and the ability to stand all shift.

Qualifications

• Culinary experience required in a hotel or related field.
• High School diploma or equivalent preferred.
• Flexible and long hours sometimes required.
• Medium work - lifting up to 50 pounds.
• Ability to stand during entire shift.
• Ability to withstand hot and cold temperatures.
• Knowledge of hotel menus and preparation standards.
• Proficiency in cooking techniques: charbroiling, poaching, deep-frying, saute, braising, roasting and par-cooking.
• Knowledge of herbs and spices and proper usage.

Responsibilities

• Maintain cleanliness and organization of all storage areas.
• Prepare and plate buffet items according to hotel standards.
• Recognize quality standards in fresh vegetables, fish, dairy and meat.
• Maintain a clean, sanitary kitchen environment and proper storage procedures.
• Prepare food for Banquets as specified.
• Prepare all foods following standard recipes and assist in other kitchen stations as needed.
• Break down buffets and kitchen lines and store items properly.
• Operate and maintain kitchen equipment in a safe manner.
