Job summary

Fenway Hotel in Dunedin, FL is seeking a dependable Full-Time Prep Cook to join our culinary team. This hands-on role requires organization, sanitation, and the ability to work in a fast-paced kitchen. You will prepare ingredients, sauces, stocks, and assist with banquet dinners and events.

Ideal candidates have at least 1 year restaurant experience, strong customer service skills, and the ability to work well with a team under pressure. Benefits include medical, 401(k), PTO and dining discounts.

Responsibilities

  • Prepare vegetables by peeling, slicing, dicing, chopping, and portioning.
  • Prepare stocks, dressings, sauces, and vinaigrettes.
  • Cook bulk-prep items including braised meats, soups, and sides.
  • Perform basic butchering and processing of poultry and fish.
  • Assist with baking and pastry preparation.
  • Prepare and portion food for cooking and service.
  • Assist with plating for dinners, banquets, and events.
  • Stock kitchen supplies and manage storage locations.
  • Receive, load, and unload deliveries and equipment.
  • Maintain clean and organized workstations, floors, and surfaces.
  • Follow sanitation, handwashing, and knife-safety procedures.

Fenway Hotel is looking for a dependable, energetic Full‑Time Prep Cook to join our culinary team in Dunedin, FL. This is a hands‑on role for someone who enjoys working in a fast‑paced kitchen, staying organized, and helping set the team up for success. From preparing fresh ingredients and sauces to assistingwith banquet dinners, baking, and keeping the kitchen running smoothly, you’ll play an important role in what comes out of our kitchen every day.

What You’ll Do

As a Prep Cook, you’ll support the culinary team with daily food preparation, kitchen organization, sanitation, and service.

Your responsibilities will include:

  • Prepare vegetables by peeling, slicing, dicing, chopping, and portioning.
  • Prepare stocks, salad dressings, sauces, and vinaigrettes.
  • Cook bulk-prep items, including braised meats, soups, sides, and other menu components.
  • Perform basic butchering and processing of whole poultry and fish.
  • Assist with baking and pastry preparation.
  • Prepare and portion food products for cooking and service.
  • Assist with plating dinners and other food preparation for banquets and events.
  • Stock kitchen supplies and ensure items are stored in their designated locations.
  • Receive, load, and unload food deliveries and kitchen supplies.
  • Restock clean dishes, flatware, cookware, and equipment.
  • Maintain clean and organized workstations, coolers, freezers, equipment, walls, and floors.
  • Sweep, scrub, and mop kitchen floors as needed.
  • Assist with dishwashing—all members of the kitchen team contribute to keeping the operation clean and organized.
  • Remove trash, clean garbage containers, and maintain designated trash areas.
  • Follow Safe Staff sanitation standards, proper handwashing procedures, food‑safety requirements, and knife‑safety procedures.
  • Maintain a professional appearance, uniform, and personal grooming.
  • Communicate effectively and respectfully with fellow team members.
  • Take ownership and pride in the hotel, restaurant, kitchen, and guest experience.
  • Perform additional duties as requested by management to support our guests and the culinary operation.

Physical Requirements

This is an active, hands‑on culinary position. Team members must be able to:

  • Stand for extended periods of time.
  • Work extended hours when business needs require.
  • Work around hot stoves, grills, and other commercial kitchen equipment.
  • Safely and effectively use knives and kitchen machinery.
  • Cut, chop, portion, and prepare food throughout the shift.
  • Lift up between 20 - 35 pounds.
  • Communicate clearly with team members.
  • Work effectively in a physically demanding, fast‑paced kitchen environment.
