Job summary

Responsibilities

• Identify deficiencies in raw materials.
• Identify products by proper name at sight and trim all loins.
• Label/identify sub primal cuts after trimming for next steps.
• Know basic cuts and trims for prep table (stew, roasts, PTRs).
• Heavy lifting may be required.
