Responsibilities

• Able to see deficiencies in raw materials.
• Identify product by proper name at sight and trim all loins.
• Label/identify sub primal cuts after trimming to ensure product is ready for next step in processing.
• Knowledge of basic cuts and trim that prep table is responsible for producing (stews, roasts, PTRs, etc.).
• Some heavy lifting required.
