Job summary

• Basic knowledge of meat cuts.
• Ability to work in a team environment.

Responsibilities

• Able to see deficiencies in raw materials.
• Identify the product by proper name at sight as well as the ability to trim all loins.
• Ability to label /identify sub primal cuts after trimming to ensure product is ready for next step in processing.
• Knowledge of basic cuts and trim that prep table is responsible for producing (stew, roasts, PTRs, etc.)
• Some heavy lifting required
