Qualifications

• Previous butcher or kitchen prep experience preferred.
• Strong knife skills and knowledge of meat and seafood cuts.
• Ability to follow recipes, portion specs, and food-safety procedures.
• Reliable, organized and able to work in a fast-paced kitchen.

Responsibilities

• Break down, trim, and portion meat, poultry, and seafood per recipes and standards.
• Prepare cuts for daily service and events; adjust for menu changes.
• Label, date, rotate, and store products using FIFO.
• Inspect products for freshness and proper temperature; report concerns.
• Keep work areas, knives, equipment, and storage spaces clean and sanitary.
• Follow food safety, sanitation, and workplace safety procedures.
• Track product usage and communicate shortages to the chef.
• Reduce waste by efficient use of products and accurate yields.
• Coordinate with the chef and prep team to meet deadlines.
• Assist with other kitchen prep duties as needed.
