Job summary

Bazaar Meat Miami Beach, part of the José Andrés Group, is seeking a skilled Butcher to fabricate and portion premium meats for a fine-dining concept at Andaz Miami Beach.

You will work closely with Culinary Leadership to ensure precision, proper yields, and rigorous sanitation while maintaining an organized, high-standard station.

Strong knife skills and a passion for craft are essential, with opportunities to learn from experienced JAG chefs in a dynamic, meat-focused kitchen.

Qualifications

• 2+ years of professional butchery or protein-focused culinary experience.
• Experience in a fine dining steakhouse or premium meat program preferred.
• Strong knowledge of beef fabrication, primal and sub-primal cuts.
• Excellent knife skills and understanding of safe butchery techniques.
• Flexible availability, including early mornings, evenings, weekends, and holidays.

Responsibilities

• Fabricate and portion beef, pork, lamb, poultry, and other proteins.
• Break down whole and sub-primal cuts safely and efficiently.
• Trim, debone, portion, tie and prepare proteins for service.
• Maintain accurate portion sizes to support consistency and food-cost objectives.
• Handle premium and high-value products with exceptional care.
• Maintain a clean, organized butcher station and equipment.
• Follow all safety, sanitation, and storage procedures.
