José Andrés Group’s Bazaar Meat in Miami Beach seeks a skilled Butcher to fabricate and portion premium meats with precision. The role demands strong knife skills, knowledge of meat fabrication, and a commitment to quality, yield, and sanitation in a high-end steakhouse environment.

The candidate will collaborate with Culinary Leadership, maintain proper storage, and uphold food safety standards while contributing to a dynamic kitchen team.

Qualifications

• 2+ years of professional butchery or meat fabrication experience preferred.
• Experience in a fine dining steakhouse or premium meat program is preferred.
• Strong knowledge of beef fabrication and specialty cuts.
• Excellent knife skills and safe butchery techniques.

Responsibilities

• Fabricate and portion beef, pork, lamb, poultry, and other proteins per Bazaar Meat specifications.
• Break down whole and sub-primal cuts safely and efficiently.
• Trim, debone, portion, tie, and prepare proteins for service.
• Maintain an organized, sanitized butcher station and proper product rotation.
• Support kitchen production and service needs and participate in training.
