Responsibilities

• Determine batch recipes and measure ingredients; ensure dough is delivered into the rounder.
• Record batch data and maintain proofing library.
• Achieve and maintain dough certification.
• Monitor dough temperature and metal detector checks; document results.
• Change dough sizes on equipment as needed (dividers, metal detector, JLS).
• Check sifter tailings and record findings.
• Operate tray washer; ensure cleaning and sanitizing of trays as required.
