Qualifications

• Two or more years of professional kitchen experience.
• Experience dough from scratch.
• Experience with a Forno oven or high-temperature pizza oven.
• Thorough understanding of dough fermentation, hydration, proofing, and baking techniques.
• Ability to thrive in a fast-paced, high-volume environment while maintaining attention to detail.
• Availability to work evenings, weekends, and holidays.
• Ability to stand for extended periods and lift up to 50 pounds.

Responsibilities

• Prepare, mix, ferment, portion, and maintain pizza dough according to recipes.
• Monitor dough hydration, fermentation schedules, proofing, and quality control.
• Stretch, top, and bake pizzas with consistent quality and presentation.
• Prepare sauces, proteins, vegetables, and ingredients for daily service.
• Ensure proper product rotation, storage, and inventory management.
