Job Description

Reporting to the Executive Pastry Chef/Assistant Executive Pastry Chef, responsibilities include:

Responsibilities
  • Demonstrate commitment to our ‘Our Culinary Culture’.
  • Lead and supervise pastry team, delegate and prioritize duties to ensure high productivity.
  • Supervise colleagues to ensure quality and efficient service.
  • Maintain knowledge of menu items, daily features, and promotions.
  • Ensure all pastry items meet recipes and standards, perform quality checks.
  • Communicate standards and expectations to team.
  • Monitor and delegate EcoSure and Servesafe standards, maintain temperature logs.
  • Manage product rotation to minimize waste.
  • Maintain cleanliness and safety of work areas.
  • Report issues immediately; operate station daily including off days.
  • Participate in daily briefings, liaise with outlet chefs, and improve food presentation.
  • Ensure sustainability procedures are followed.
  • Lead pastry department quality and production, coordinate with banquet and restaurant functions.
  • Conduct shift briefings, assist in product development, and train new colleagues.
Qualifications
  • Leadership experience in pastry production.
  • Skills in sugar work and chocolate preferred.
  • Computer literacy is an asset.
  • Strong interpersonal and problem-solving skills.
  • Ability to work under pressure and as part of a team.
  • Focus on guest needs, remain calm and courteous.
Physical Demands
  • Constant standing and walking.
  • Frequent lifting up to 50 lbs.
  • Occasional kneeling, pushing, pulling, and ladder use.
Required Education and Experience
  • Minimum 3 years leadership in a luxury, high-volume hotel.
