Join to apply for the Pastry Cook PM role at The Umstead Hotel and Spa

The pastry line cook is responsible for plating desserts at Herons, The Umstead Hotel & Spa’s five-star, five-diamond restaurant, while maintaining organization and cleanliness. They must embody the Pastry Chef’s core values of quality, sanitation, and fair treatment of all associates. The role involves maintaining a clean, organized, and efficient workspace as directed by the Pastry Chef. The pastry line cook reports directly to the Hotel’s Pastry Chef and Pastry Sous Chef.

Responsibilities include:
  1. Setting up the pastry line, quality checking all items, spinning ice creams and sorbets, and executing precise knife work.
  2. Producing mousses, cakes, sauces, and glazes, ensuring consistency and following recipes.
  3. Proofing and baking various bread types such as pretzels, baguettes, and multigrain breads.
  4. Organizing and inventorying all produced items in walk-in coolers, freezers, lowboys, and reach-ins.
  5. Assisting in creating new desserts per menu cycle with the Pastry Chef.
  6. Maintaining professional relations with colleagues, treating them with respect, and adhering to Pastry Kitchen and Hotel standards.
  7. Promoting open communication between the pastry kitchen and other hotel outlets, including front of house, banquet team, and front office.
  8. Demonstrating a calm, organized approach in all situations and conflicts.
  9. Contributing to a culture of passion for excellence and continuous improvement.
  10. Willingness to work weekends, holidays, and during peak hotel activity.
Physical Requirements:
  • Ability to stand for at least 8 hours with frequent bending and squatting.
  • Ability to lift at least 50 pounds regularly during shifts.
  • Ability to read and follow recipes.

Schedule:
