Job summary

Pebble Beach Company is seeking a Pastry II to ensure high-quality pastry preparation and presentation for hotel outlets, banquets, and events at The Inn at Spanish Bay.

Follow recipe cards, coordinate with the Pastry Chef, rotate stock, and maintain mise en place while complying with safety policies; opportunities exist within Pebble Beach Company’s culinary program.

Qualifications

• Knowledge of ingredients and preparation required.
• Able to operate typical pastry tools and equipment.
• 2+ years’ experience preparing pastries at a premier restaurant or resort required.
• Food safety certification required.
• High school diploma or equivalent required.

Responsibilities

• Follow recipe cards exactly to prepare pastries and baked goods.
• Discuss daily events and production schedule with the Pastry Chef or Supervisor.
• Rotate food in coolers, dry storage and personal mise en place, to ensure freshness and reduce waste.
• Clean cooking surfaces and equipment.
• Assist in plating up desserts/baked goods in pastry shop.
• Set-up mise en place for the next day.
• Comply with all Pebble Beach Company safety and health policies and procedures.

• An understanding of pastry shop operation and ordering ingredients helpful.
• Graduate of accredited culinary program or apprenticeship is preferred.
