Job summary

Four Seasons Hotels and Resorts is seeking an Overnight Cook at our location in the United States. The role involves preparing food items per guest orders across breakfast, lunch, and dinner service, while maintaining safety and sanitation standards.

Responsibilities include station setup, mise en place, scaling recipes to the gram, and operating a range of kitchen equipment. A minimum of three years of culinary experience and knife skills are required; supervision and safety are emphasized.

Qualifications

• Minimum three-years culinary experience.
• Proficient knife skills and ability to multi-task.

• Scale recipes to the gram and ensure mise en place and station setup for breakfast, lunch, and/or dinner service.
• Operate and clean kitchen equipment safely (deep fryer, broiler, stove, steamer, mixer, oven, etc.).

About the role:

The overnight Cook will prepare food items per guest order in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.

What you will do:

• Work all stations on the line (grill, sauté, cold line). Prepare food items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards; complete mis en place and set-up station for breakfast, lunch, and/or dinner service. Manages the temperature of meat and fish.
• Start food items that are prepared ahead of time, making sure not prepare beyond estimated needs. Scales recipes to the gram.
• Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.

What you bring:

• High school education, cooking school, culinary institute education or equivalent experience.
• Minimum three-years culinary experience. Intermediate culinary knowledge is expected for this position.
• Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill.
• Proficient knife skills and ability to multi-task.
