Scratch Bakery Café is seeking an experienced Bakery Production Manager to lead and scale production for our growing artisan bakery café. This is a hands-on leadership role overseeing a team and driving systems for high-volume, high-quality output.

You will manage production planning, scheduling, and inventory while collaborating with the Executive Pastry Chef to refine recipes. The position is full-time with overnight shifts and growth opportunities within the company.

Qualifications

• 5+ years of bakery production experience.
• Proven experience managing teams in a bakery or high-volume kitchen.
• Experience building systems and scaling production operations.
• Hands-on production experience with artisan breads and laminated pastries.
• Strong organizational and communication skills.
• Ability to work overnight shifts consistently.
• Passion for scratch baking and high-quality products.

Responsibilities

• Lead and manage a production team (currently around 10 staff, growing).
• Oversee daily production across all product categories (breads, laminated pastries, cakes, cookies, café pastries).
• Develop and manage production schedules and workflow systems.
• Hire, train, mentor, and hold staff accountable to performance standards.
• Maintain product consistency and quality across all offerings.
• Scale production systems to support business growth.
• Manage ordering, inventory, and ingredient control.
• Collaborate with Executive Pastry Chef on recipe development and refinement.
• Ensure compliance with food safety and sanitation standards.
• Participate in hands-on production.
