Job summary

HEI Hotels & Resorts is seeking a Sous Chef for Orion's Roof at the Marriott Virginia Beach Oceanfront Resort. You will plan and manage kitchen staff, oversee procurement, production, and presentation of all hotel food in line with HEI standards.

Experience: five or more years in a related role; culinary education preferred; hotel dining knowledge; strong leadership, communication, and cost-control skills in a fast-paced environment.

Qualifications

• Two+ years of post-high school education, culinary education is desirable.
• Five+ years of employment in a related position.
• Hotel experience preferred.
• Knowledge of hotel operations, including budgeting and safety programs.
• Leadership skills to motivate and develop staff.

Responsibilities

• Plan and manage the kitchen staff in procurement, production, preparation, and presentation of all hotel food.
• Manage HR in production areas: hire, schedule, train, coach, and reviews.
• Schedule and maintain kitchen sanitation and equipment.
• Monitor and control labor and food costs; prepare reports and budgets.
• Assist Executive Chef in menu costing and implementation; act in their absence.
