Qualifications

• Two years as cook in a large-scale operation preferred.
• One year's work experience in long term care preferred.
• High school diploma or equivalent preferred.

Responsibilities

• Prepares meal items according to planned menus and standardized recipes; informs supervisor of menu changes.
• Reviews menus, census information, production guides and pre-prep sheets to determine quantities.
• Prepares food according to safe handling guidelines and regulatory codes.
• Assists with food ordering, storage and preparation; serves meals on time.
• Maintains standards for food preparation and quality; uses substitutes as needed.
• Operates kitchen equipment; bakes, roasts, broils, and steams items for consumption.
• Prepares and assists with special function meals; ensures nutrition accuracy.
• Handles prep-work like washing, peeling and cutting vegetables; weights meat for menu compliance.
• Presents food attractively with gravies, sauces and garnishes; tastes for palatability.
• Monitors food temperatures prior to meal service; records as required.
• Makes menu changes under supervision; uses nutrition substitutes with approval.
