Job summary

OPCO Skilled Management seeks a dedicated cook to prepare meals in accordance with planned menus and standardized recipes. You will review menus, census data, and prep sheets to determine food quantities while adhering to safety guidelines and federal/state codes.

You will assist with ordering, storage, and timely meal service, maintain quality standards, operate a range of kitchen equipment, and help with special diets and function meals.

Qualifications

• Highschool diploma or equivalency preferred.
• Two years as cook in a large-scale cooking operation preferred.
• One year’s work experience in long term care preferred.

Responsibilities

• Prepares meal items according to planned menus and standardized recipes; refer to supervisor or dietitian if menu changes are needed.
• Reviews menus, resident census information, production guides and pre-prep sheets to determine food quantity.
• Prepares food according to safe handling guidelines and state/federal codes.
• Assists with food ordering, storage and preparation as designated; serves meals on time.
• Maintains standards for food preparation and quality; uses substitutes when required; follows recipes.
• Operates kitchen equipment (blenders, mixers, slicers, steamer, oven, range, tilt skillet) to prepare items.
• Prepares consistency-modified and diet foods as needed; assists with special function meals.
• Pre-prepares vegetables/fruits; slices meat and weighs portions for nutrition accuracy.
• Prepares and serves food attractively; tests palatability by tasting.
• Monitors and records food temperatures prior to meal service.
• Makes menu changes under supervision; uses nutrition substitutes with approval.
• Follows hand washing, thawing, packaging, labeling, glove use, and refrigeration guidelines.
• Follows cleaning schedule; cleans equipment and workspace; handles waste; washes pots and pans.
• Ensures meeting meal schedules; dietary manager absence coverage as needed.

Education
