Qualifications

• Meat cutting skills to specifications and time standards.
• Knowledge of meat room sanitation and inventory controls.
• Ability to follow food safety guidelines and local health laws.

Responsibilities

• Cuts meat according to product specifications and time standards.
• Completes use of buffet production system to ensure quality and shelf life.
• Rotates cut and boxed meat to ensure freshness.
• Stocks and arranges Meat Cooler per safety guidelines.
• Sanitizes surfaces and meat room between production steps.
• Notifies manager of discrepancies in product or equipment.
• Performs opening and closing administrative procedures.
• Maintains equipment per the Equipment Maintenance manual.
• Performs duty roster tasks.
