Meat Manager
A meat apprentice learns the skills of cutting meat for retail sales. The apprentice will learn knife skills for cutting fresh beef, pork, and packaging chicken, as well as production, sales, and merchandising objectives. Responsibilities include unloading product from trucks, cutting and trimming, dating, weighing, packaging, merchandising, and stocking products on racks and shelves up to 6 feet high. They operate meat saws, cubers, stock dollies, grinding machines, slicers, scales, price marking devices, labeling machines, and use knives, cleavers, and case cutters. The work involves shifts of up to 8 hours, reading and writing, basic math, lifting and stacking up to 100 pounds, and working in refrigerated environments with temperatures from 0 to 55 degrees Fahrenheit. Tasks include preparing, weighing, and wrapping meat items such as steaks, ground meat, roasts, and pork. The role also involves assisting customers, making cuts to order, controlling inventory and stock levels, checking in vendors, logging spoilage and item sales, maintaining product freshness, stocking pre-packaged meat, rotating products, checking code dates, and performing cleaning functions.
