Job summary

Qualifications

Job Purpose:

• To cut and prepare various types of meat and poultry products for sale in a retail or wholesale environment, ensuring quality, freshness, and customer satisfaction. This role requires a higher level of skill and experience than a Meat Cutter 1, including the ability to perform more complex cuts, operate specialized equipment, and potentially train or supervise junior staff.

Key Responsibilities:

• Receive and inspect delivered meat and poultry products for quality and freshness, rejecting any subpar items.
• Weigh, trim, and cut meat and poultry to customer specifications, utilizing various cutting techniques and tools, including knives, band saws, and grinders.
• Prepare ground meats, sausages, and other value-added products according to established recipes and procedures.
• Maintain a clean and organized work area, adhering to strict sanitation and safety guidelines.
• Provide excellent customer service by answering questions, offering recommendations, and fulfilling special orders.
• Properly wrap, label, and store meat and poultry products to maintain freshness and prevent spoilage.
• Operate and maintain meat processing equipment, ensuring its proper functioning and cleanliness.
• May train and provide guidance to Meat Cutter 1 and other junior staff members.
• May assist in inventory management and ordering of meat and poultry products.
• Adhere to all company policies and procedures, including those related to food safety and hygiene.
• Perform other related duties as assigned.

Additional Duties:

• Management reserves the right to assign additional tasks as necessary to support store operations. Employees will be provided with proper training and protective equipment for any and all assigned tasks that require special handling.

Qualifications:

Preferred Education:

• High School Diploma or equivalent

Required Experience:

• Minimum of two years of experience in meat cutting and processing in a retail or wholesale environment.
• Demonstrated experience with various meat cuts, including beef, pork, poultry, and lamb.
• Experience operating and maintaining meat cutting equipment, including band saws, grinders, and slicers.
• Experience with safe food handling practices and sanitation procedures.
