Role Overview:

The Meat Cutter's performance impacts the guest's dining experience by ensuring high-quality meat cuts. Proper meat cutting helps optimize profits and provides guests with full value in product and service.

Responsibilities:

1. Food Production:
   • Cut meat according to product specifications and time standards.
   • Follow the buffet production system to ensure quality and shelf life compliance.
   • Rotate cut and boxed meat to maintain freshness.
   • Stock and organize the Meat Cooler following food safety guidelines.
2. Cleanliness:
   • Sanitize all surfaces between chicken and other meats to prevent cross-contamination.
   • Recognize signs of spoiled meat (sticky, slick, bad smell).
   • Clean and sanitize the meat room according to standards.
   • Adhere to local health department laws.
3. Operational Excellence:
   • Maintain inventory using administrative forms and determine production levels.
   • Report discrepancies in product or equipment to the manager.
   • Perform opening and closing administrative procedures.
   • Maintain equipment per the maintenance manual.
   • Complete duty roster tasks.
