Position Summary:

This position is responsible for ensuring quality, consistency, production, and execution of all food menu items. Interacts with fellow employees and supervisors in a polite and courteous manner to ensure gracious hospitality. Occasionally may assume a leadership role in the absence of the Chef in charge.

Primary Duties and Responsibilities:

  • Maintain professional appearance standards as directed in the Tao Group Hospitality Employee Handbook.
  • Possess in-depth knowledge of assigned recipes and execute them to company standards.
  • Anticipate and accommodate guest needs.
  • Handle all allergy and dietary restrictions and modifications.
  • Assist in inventory and creating daily prep lists.
  • Follow all orders from the POS system and directions from the expeditor accurately.
  • Maintain cleanliness and sanitation of station, kitchen, and venue.
  • Follow supervisor’s instructions, communicate effectively, and support team members.
  • Possess general knowledge of the venue.
  • Comply with Department of Health and sanitation standards.
  • Work as part of a team, providing help and support to fellow team members.
  • Communicate product needs to chefs and support staff.
  • Check cover counts, BEOs, and Fire Sheets.
  • Set up stations and perform opening/closing procedures as directed.
  • Stock station with supplies and set up 'mise en place' following FIFO standards.
  • Sanitize station and perform side-work routines.

Secondary Duties and Responsibilities:

  • Report equipment or furniture damage immediately.
  • Participate in pre-service meetings, training sessions, and departmental meetings.
  • Lead by example, share knowledge, and maintain a positive attitude.

Minimum Education and Qualifications:

  • Four years of culinary experience in a high-volume operation, or two years of culinary training plus two years of experience.
  • Effective communication skills in English.
  • Pastry or sushi experience and culinary school preferred.

Competencies:

  • Knowledge of Mohegan Sun policies, Tao Group Hospitality, and hotel environments.
  • Knowledge of kitchen equipment, food preparation, and handling.
  • Ability to read recipes and follow instructions.

Training Requirements:

  • Complete HR training courses, Tao Group Pastry Cook training, and Food Handling Certificate.
  • Understand Time & Attendance and Manager Self Service systems.
  • Adhere to health and sanitation guidelines.

Physical Demands and Work Environment:

  • Stand, lift, and bend for extended periods; lift up to 50 lbs.
  • Repetitive motions, exposure to hot kitchen elements, and cleaning materials.
  • Work in a fast-paced environment with a flexible schedule including days, evenings, weekends, and holidays.
