Job Description
The Remote Breakfast Cook/Baker position assists with the preparation, production, and presentation of a variety of foods, completion of production sheets, direction/training of food service personnel, and other related food service activities. The role also involves producing bakery goods, maintaining cleanliness, and ensuring the proper operation of food service areas in accordance with NMS’ mission, vision, and values, as well as departmental policies and procedures.
Responsibilities
- Perform main line food production duties as assigned per shift.
- Prepare a variety of bakery products in a remote camp setting.
- Handle pastry preparations including mixing, baking, and frying.
- Coordinate with supervisors on daily needs, complete production sheets, review maintenance reports, and verify supplies.
- Assist with menu and recipe development.
- Monitor and replenish kitchen items using proper rotation.
- Cook breakfast, lunch, dinner, and other food items like salads, sandwiches, and trays.
- Prepare, present, and restock food items such as vegetables, meats, cheeses, and bakery goods.
- Use production sheets to determine quantities needed.
- Utilize various food preparation equipment and procedures.
- Assist team members in food production and handling special duties.
- Serve in the service line as needed.
- Handle special projects including cleaning and maintenance.
- Rotate food items appropriately.
- Clean and sanitize preparation areas and equipment.
- Oversee food serving lines, ensuring proper stock and cleanliness.
- Manage waste removal and set up/break down of service areas.
- Communicate supply needs with supervisors.
- Complete menu display announcements.
- Organize freight and perform scheduled cleaning tasks.
- Supervise staff directly or through lead personnel.
- Maintain quality control and sanitation standards.
- Train and supervise food service personnel.
- Ensure proper rotation of produce and dairy products.
- Maintain equipment and storage areas following safety and sanitation protocols.
- Report safety or sanitation issues to supervisors.
- Perform other relevant duties as assigned.
Qualifications
- High School Diploma or GED.
- Minimum three years of related restaurant cooking/baking experience.
- Ability to instruct and train others, handle multiple tasks.
- Obtain Alaska Food Workers Card and/or ServSafe Certification upon hire.
- Pass pre-employment tests including drug, physical, and hearing assessments.
- Ability to work as part of a team and make quick decisions with minimal supervision.
- Stand for 12 hours per shift.
- Live in dormitory-style accommodations and meet cleanliness standards.
- Proficient in English (reading, writing, speaking).
- Adhere to safety guidelines and regulations.
Residency and Travel Information
Candidates outside Anchorage are responsible for travel expenses for pre-employment testing and training. Employees must cover travel costs for remote location reporting trips.
Working Conditions
Indoor/outdoor environment, often in arctic conditions. Moderate to loud noise levels. Must be physically capable of standing, walking, climbing, lifting, pushing, pulling, and other physical tasks. Ability to travel by plane or bus to remote sites. Physical capacity to meet specified lifting, carrying, and movement requirements.
