Job summary

Quirch Foods is seeking an experienced Meat Department Manager to oversee daily operations of the department, including product ordering, cutting, packaging, pricing, and merchandising. Qualifications

Essential Duties and Responsibilities

• Oversee daily operations of the retail meat department, including product ordering, receiving, cutting, packaging, pricing, and merchandising.
• Supervise, schedule, and train meat department staff, including meat cutters, wrappers, and sales associates, to ensure adequate coverage and consistent performance standards.
• Ensure department compliance with food safety, sanitation, and USDA/FDA regulatory requirements, as well as all applicable Navy Exchange operating requirements and specifications.
• Monitor inventory levels, product freshness, and shrinkage, implementing controls to minimize waste and maximize department profitability.
• Manage department budget, labor costs, and sales performance against established goals, and prepare related reports for leadership.
• Maintain a strong working relationship with Navy Exchange management and personnel to ensure smooth day-to-day operations and customer satisfaction.
• Develop and execute merchandising and promotional plans to drive department sales and enhance the customer shopping experience.
• Ensure proper handling, rotation (FIFO/FEFO), and cold-chain storage of meat products to maintain quality and freshness.
• Address customer inquiries, requests, and complaints promptly and professionally to maintain a high standard of customer service.
• Coordinate routine maintenance and repairs for department cutting, wrapping, and refrigeration equipment.
• Maintain department cleanliness, safety, and adherence to all applicable health and safety standards.
• Partner with Quirch Foods purchasing and logistics teams to ensure timely product delivery and appropriate stock levels.

Qualifications and Educational Requirements

• High school diploma or equivalent required; Associate's or Bachelor's degree in Business, Food Science, or a related field preferred.
• 3+ years of experience in meat department management, retail meat operations, or a related food service/retail management role.
• Working knowledge of meat cutting, fabrication, and merchandising practices.
• Strong knowledge of food safety, sanitation, and regulatory requirements applicable to retail meat operations.
• Proven supervisory and team leadership skills, with the ability to schedule, train, and manage department staff.
• Strong customer service and communication skills.
• Ability to work in a physically active retail environment, including cold storage and refrigerated areas.
• Must be able to obtain and maintain base access credentials required to work at a military installation.

Preferred Skills

• Experience working within a military exchange (NEX, AAFES, MCX) or commissary retail environment a plus.
• ServSafe or other food safety certification a plus.
• Experience with retail point-of-sale and inventory management systems.
• Bilingual (English/Spanish) a plus.
