Position Summary
The Restaurant Manager is responsible for overseeing the daily operations of the sushi bar and grill, ensuring high standards of guest service, food quality, employee performance, safety, and profitability. This position leads and supports the restaurant team, helps maintain an efficient and welcoming environment, and ensures compliance with company policies and applicable laws and regulations.
Essential Duties and Responsibilities
- Oversee daily restaurant operations, including front-of-house, bar, sushi bar, and kitchen activities.
- Provide consistent leadership, direction, coaching, and support to restaurant employees.
- Recruit, interview, hire, onboard, train, and develop team members in accordance with company procedures.
- Prepare and manage employee schedules based on business needs, staffing levels, and labor targets.
- Ensure adequate coverage during operating hours and coordinate breaks and shift assignments.
- Monitor employee attendance, performance, conduct, and compliance with company policies.
- Conduct regular team meetings, pre-shift meetings, and training sessions as needed.
- Promote a positive, respectful, inclusive, and professional workplace.
- Ensure guests receive prompt, courteous, and high-quality service.
- Respond to guest questions, complaints, and concerns professionally and effectively.
- Monitor food quality, presentation, portion control, temperature, and adherence to recipes and standards.
- Work closely with sushi chefs, kitchen staff, bartenders, servers, bussers, and hosts to maintain smooth service.
- Ensure compliance with food-safety, sanitation, health-code, and responsible alcohol-service requirements.
- Conduct or support routine inspections of food-preparation, storage, dining, bar, and restroom areas.
- Monitor inventory levels, product rotation, receiving procedures, waste, and spoilage.
- Assist with ordering supplies and maintaining appropriate food, beverage, and operating inventories.
- Review sales, labor, food-cost, beverage-cost, and other operational reports.
- Support cash-handling, deposit, point-of-sale, and loss-prevention procedures.
- Help control operating expenses while maintaining service and product-quality standards.
- Coordinate opening, closing, cleaning, maintenance, and security procedures.
- Report equipment issues, facility concerns, employee injuries, and other incidents to appropriate leadership.
- Ensure required records, logs, certifications, and documentation are completed accurately and on time.
- Support marketing, promotions, community events, and other business initiatives as assigned.
- Perform other related duties as assigned.
Qualifications
- Previous restaurant management, supervisory, or leadership experience required; experience in a sushi restaurant, full-service restaurant, or bar and grill preferred.
- Knowledge of restaurant operations, customer service, food safety, sanitation, and staff supervision.
- Familiarity with sushi, Japanese cuisine, grilling, beverage service, or related culinary operations is a plus.
- Strong leadership, communication, organization, and problem-solving skills.
- Ability to make sound decisions and remain calm in a fast-paced environment.
- Ability to motivate, coach, and hold employees accountable in a fair and professional manner.
- Ability to read and interpret operational, sales, labor, and inventory reports.
- Proficiency with point-of-sale systems, scheduling software, email, and basic computer applications.
- Ability to work a flexible schedule, including evenings, weekends, holidays, and extended hours as business needs require.
- Required food-handler, manager, alcohol-service, or other certifications must be obtained and maintained in accordance with applicable law.
- Ability to read, write, and communicate effectively in English. Additional language skills are a plus.
Physical Requirements
- Ability to stand and walk for extended periods.
- Ability to bend, reach, stoop, twist, and move safely throughout the restaurant.
- Ability to lift and carry supplies weighing up to approximately 50 pounds, with or without reasonable accommodation.
- Ability to work near hot surfaces, kitchen equipment, sharp objects, cleaning products, and varying temperatures.
- Ability to perform occasional administrative duties, including computer and telephone work.

This position is performed in a busy sushi bar and grill environment and involves frequent interaction with employees, guests, vendors, and leadership. Employees are expected to follow all company policies and applicable health, safety, food-handling, sanitation, and alcohol-service regulations.
