Job summary

Hideaway Golf Club is seeking a skilled Sushi Cook to prepare, assemble, and present sushi, sashimi, and rolls for a fine-dining club. You will follow recipes, ensure freshness, and maintain proper sanitation while supporting events and Member services.

The role requires strong knife skills, knowledge of raw seafood handling, and the ability to work within a collaborative Culinary Team to deliver exceptional dining experiences for Members and Guests.

Qualifications

• Minimum two years of professional culinary experience preferred.
• Experience in sushi preparation, sashimi, nigiri, and rolls preferred.
• Experience in a private club, luxury resort, or fine-dining environment preferred.

Responsibilities

• Prepare sushi, sashimi, nigiri, rolls, and related items according to recipes and standards.
• Season sushi rice to desired temperature, flavor, and texture.
• Portion and prepare fish, shellfish, vegetables, garnishes, and sauces.
• Demonstrate proper knife techniques for raw seafood.
• Maintain clean, stocked, and organized sushi station before service.
• Assist with opening/closing kitchen procedures and other culinary tasks as needed.
• Support dining operations, banquets, events, and Member-focused service.
