Job summary

The Lodge at Pebble Beach, part of Pebble Beach Company, is seeking a Cook 1 to produce hot and cold foods to the highest standards set by the Lodge kitchen management.

You will assign tasks with team leaders, prepare menu items, maintain mise en place, ensure safety and sanitation, and train junior cooks. Requires five years kitchen experience, knife skills, and a food safety certificate; high school diploma required.

Qualifications

• Basic hot/cold food cooking knowledge and proficient knife skills.
• Five years kitchen experience including two years in a premier restaurant, resort or hotel.
• Food safety certification required.
• High school diploma or equivalent required.

Responsibilities

• Assign tasks to employees with the approval of team leaders.
• Prepare cold food sandwiches, salads and dressings.
• Basic vegetable prep, slicing, dicing and proper handling.
• Prepare and handle meat, fish, vegetables, starches, etc.
• Set up mise en place and station readiness for service.
• Time entrees to finish together and ensure plate presentation quality.
• Train new employees in responsibilities and kitchen standards.
• Maintain cleanliness and proper storage; report unsafe conditions.
