Position Summary :
Responsible for all grilled, broiled, fried, and sautéed items prepared in the kitchen. Includes preparation and portioning of food items such as tempura, sauces, and grilled items. Also responsible for plating, garnishing, and maintaining a sanitary workstation.
Essential Functions and Responsibilities :
Following restaurant service and cooking procedures :
- Prepare or oversee preparation of all recipes, ensuring compliance with portion sizes, quality standards, and company policies as outlined in the Benihana Kitchen Guide and Employee Handbook.
- Prepare a variety of cold and hot food items using standardized recipes.
- Handle specially requested items.
- Coordinate food production with meal serving times to maintain quality, temperature, and presentation.
- Use knives, hand tools, utensils, and equipment to portion, cut, slice, broil, roast, carve, skewer, garnish, and cook food.
- Adhere to sanitation, personal hygiene, and health standards, following guidelines in the Benihana Kitchen Guide and Employee Handbook.
- Inform the Head Kitchen Chef about inventory levels.
- Report equipment repairs and maintenance needs to the Manager.
- Report unsanitary conditions or products in equipment, storage, or work areas.
- Communicate with Lead Line Cook to ensure efficient order processing within ticket times.
- Comply with all applicable laws, codes, and regulations.
- Maintain a clean, organized, and neat work area; clean and maintain equipment.
- Perform additional duties as assigned by supervisors.
Job Requirements :
- Previous food preparation experience required.
- Experience in the restaurant industry is a plus.
- High school diploma or equivalent preferred.
- Must be at least 18 years old.
