Job Summary

Responsible for maintaining, setting up, food production, and quality control of all meat, fish, fowl, and other food items prepared on the front-line station.

Essential Job Functions

This description summarizes primary responsibilities and qualifications. The hotel operates 24/7, so operational demands may require shift variations.

  • Prepares daily preparation lists for production.
  • Reads and employs math skills to follow recipes.
  • Prepares all broiled and sautéed food items according to standard recipes and guest checks, ensuring product consistency; involves transporting heavy food products.
  • Visually inspects, selects, and uses only high-standard food items for all menu preparations.
  • Checks and controls proper storage, portion control, especially for specific cuts of meat, to maintain quality.
  • Maintains cleanliness of refrigeration, equipment, storage, and work areas to comply with health regulations.
  • Maintains logs for cooling, heating, and temperature controls.
  • Adheres to company policies, safety, and security procedures.
  • Knows fire prevention and emergency procedures.
  • Uses protective equipment and reports unsafe conditions, accidents, injuries, or property damage.
  • Ensures a safe work environment by following safety rules.
  • Maintains a neat, clean, and well-groomed appearance as per the team member handbook.
  • Performs other duties as assigned; assists other kitchen staff as needed.
Knowledge, Skills & Abilities
  • Hold a current Food Handler Card.
  • Preferably 2 years of cooking experience, especially broiler cooking.
  • Basic knowledge of food and beverage preparation, service standards, and guest relations.
  • Good knowledge of broiler and sauté cooking fundamentals.
  • Understanding of sanitation standards and operation of kitchen equipment.
  • Basic math skills for recipes and portion sizes.
  • Basic English proficiency for communication and instructions.
  • Ability to operate beverage equipment.
Physical Demands
  • Lift or move goods up to 100 lbs.
  • Manual dexterity for kitchen tools and equipment.
  • Work within extreme temperatures and confined spaces.
  • Perform frequent physical movements including bending, twisting, standing, and walking.
