Job Summary
Responsible for maintaining, setting up, food production, and quality control of all meat, fish, fowl, and other food items prepared on the front-line station.
Essential Job Functions
This description summarizes primary responsibilities and qualifications. The hotel operates 24/7, so operational demands may require shift variations.
- Prepares daily preparation lists for production.
- Reads and employs math skills to follow recipes.
- Prepares all broiled and sautéed food items according to standard recipes and guest checks, ensuring product consistency; involves transporting heavy food products.
- Visually inspects, selects, and uses only high-standard food items for all menu preparations.
- Checks and controls proper storage, portion control, especially for specific cuts of meat, to maintain quality.
- Maintains cleanliness of refrigeration, equipment, storage, and work areas to comply with health regulations.
- Maintains logs for cooling, heating, and temperature controls.
- Adheres to company policies, safety, and security procedures.
- Knows fire prevention and emergency procedures.
- Uses protective equipment and reports unsafe conditions, accidents, injuries, or property damage.
- Ensures a safe work environment by following safety rules.
- Maintains a neat, clean, and well-groomed appearance as per the team member handbook.
- Performs other duties as assigned; assists other kitchen staff as needed.
Knowledge, Skills & Abilities
- Hold a current Food Handler Card.
- Preferably 2 years of cooking experience, especially broiler cooking.
- Basic knowledge of food and beverage preparation, service standards, and guest relations.
- Good knowledge of broiler and sauté cooking fundamentals.
- Understanding of sanitation standards and operation of kitchen equipment.
- Basic math skills for recipes and portion sizes.
- Basic English proficiency for communication and instructions.
- Ability to operate beverage equipment.
Physical Demands
- Lift or move goods up to 100 lbs.
- Manual dexterity for kitchen tools and equipment.
- Work within extreme temperatures and confined spaces.
- Perform frequent physical movements including bending, twisting, standing, and walking.
