PM LINE COOK

The Rosewild PM Line Cook position reports to and works directly with the Executive Chef and Sous Chefs (Culinary Leadership Team), executing scratch-made dishes and recipes. It is critical that you have honing your craft and demonstrate advanced culinary techniques. You should be task-oriented and comfortable working closely with the Cook I and under the Chef's direction. Opportunities for collaboration with culinary leadership are available, and your insights are valued for our shared success.

Our culinary teams are expected to uphold high standards of respect for themselves, guests, and each other. Building trusting and transparent relationships with peers in the kitchen and hotel is essential. You will work with a talented team that values collaboration, humility, and open-mindedness—egos are not tolerated. Respect for leadership and peers is imperative; we promote a positive and respectful work environment.

The PM shift typically runs from 3 PM to 11 PM, with weekends required.

What You Will Do
  • Demonstrate advanced culinary techniques and a strong understanding of kitchen operations.
  • Operate and execute dishes on various stations, including grill, sauté, fry, and pantry, ensuring consistency and quality.
  • Willingness to learn and train on the hearth station.
  • Maintain mise en place throughout service, restocking efficiently as needed.
  • Keep stations clean and organized, adhering to food safety standards.
  • Handle and butcher proteins properly, ensuring correct portions and waste reduction.
  • Assist with daily prep tasks like knife work and sauce production.
  • Adapt to service needs by transitioning between stations as necessary.
  • Take pride in the food prepared, following recipes, presentation standards, and guest preferences.
  • Uphold the company's principles of People, Place, and Character, embodying values that promote collaboration, intuitive service, and hospitality.
