Job Overview

Ensure proper service from the front line through quality control, training of line cooks, and maintaining proper sanitation levels.

Responsibilities
  • Verify all items against recipe cards, ensure use records are followed, and food is presented efficiently and with quality.
  • Monitor kitchen setup before meal functions for maximum efficiency.
  • Maintain equipment and enforce the kitchen "clean as you go" policy.
  • Prepare food following recipes and standards, coordinating with servers.
  • Start pre-prepared food items, avoiding overproduction.
  • Label and rotate food containers according to SOP, maintaining proper temperatures for perishables.
  • Check stock levels, prepare necessary items, and set up lines.
  • Identify out-of-stock items and potential shortages.
  • Return unused food to storage, covering and dating perishables.
  • Assist in controlling food costs, waste, and usage per SOP.
Qualifications
Education/Formal Training

High school diploma or equivalent.

Experience

One to two years of related experience preferred.

Knowledge/Skills
  • Knowledge of cooking practices and kitchen procedures.
Physical Demands

Must lift, push, pull, and carry items weighing up to 70 lbs, with periodic climbing, bending, and mobility requirements. Continuous standing and ability to hear timers and communicate are essential. Temperatures can range from -10°F in freezers to over 100°F on the line. Reasonable accommodations are available for individuals with disabilities.
