• Maintain knowledge of and ensure compliance with all hotel policies and procedures.
• Train, evaluate performance, resolve problems and communicate openly with staff.
• Set the day’s priorities and assign production tasks to staff.
• Create daily menu specials and obtain feedback from the Executive Chef.
• Review banquet event orders and note changes.
• Communicate clearly to staff and provide direction.
• Take inventory of specified food items for daily inventory.
• Requisition supplies and ensure proper receipt and storage; coordinate with Purchasing.
• Meet with the Steward to review equipment, sanitation and status of projects.
• Ensure staff report to work on schedule; document attendance.
• Maintain stocked kitchen work areas with required tools and equipment.
