Job summary

SOUTHWEST WINE & SPIRITS LLC at Wally’s Century Plaza, Los Angeles, is seeking an experienced culinary leader to partner with the Executive Chef to oversee daily kitchen operations in a high-volume luxury setting.

You will guide service to meet Wally’s standards, support menu execution, train staff, and maintain food safety and quality across shifts. Evening and weekend availability required; culinary degree preferred.

Qualifications

• 3+ years of experience in a culinary leadership role.
• Strong knowledge of kitchen operations and high-volume restaurant environments.
• Culinary degree preferred.

Responsibilities

• Lead daily kitchen operations with the culinary team.
• Guide service to ensure dishes meet Wally’s standards.
• Support menu execution, daily specials, events, and new item rollouts with attention to quality and consistency.
• Coach, train, and motivate kitchen staff while fostering a culture of learning, accountability, and growth.
• Maintain strong communication with culinary and front-of-house teams to ensure a seamless guest experience.
• Uphold food safety, cleanliness, organization, and operational standards throughout every shift.
• Assist with inventory, product readiness, labor awareness, and efficient kitchen workflow.
