Job summary

Lalla Grill at the Del Monte Shopping Center in Monterey, CA is hiring a hands-on Sous Chef to support the Head Chef in a fast-paced, high-volume kitchen. The role requires 50–55 hours per week, with day and night shifts, including weekends. English and Spanish language skills are valued, with opportunities for growth within the Moncada Group.

You will mentor cooks, ensure top-notch food quality and safety, and collaborate across FOH to deliver exceptional guest experiences.

Qualifications

• Must have at least 5 years of professional kitchen experience.
• Experienced in high-volume, fast-paced restaurant environments.
• Fluent in Spanish; English proficiency preferred.
• Must obtain Food Manager Certification soon after hiring.

Responsibilities

• Collaborate with Head Chef to lead daily kitchen operations.
• Direct food prep and execution during service.
• Monitor food quality, consistency, and presentation.
• Ensure safety, sanitation, and cleanliness standards.
• Learn and cover multiple kitchen stations as needed.
• Train and mentor new cooks; uphold team culture.
• Assist with inventory, ordering (Sysco and vendors), and minimizing waste.
