Job summary

La Cabra in New York, USA is seeking a Sous Baker to join the opening team at Lantern House. You will support the Head Baker, mentor a team of bakers, and coordinate daily production to ensure efficiency and consistency.

This role blends hands‑on baking with administrative duties, focusing on quality, safety, and a positive working environment while helping to establish a premier bakery operation in new York.

Qualifications

• Several years of professional bakery or pastry experience.
• Experience supervising or leading a bakery team.
• Strong understanding of laminated doughs, pastry, bread production, and bakery operations.
• Excellent organizational and time‑management skills.
• Ability to balance hands‑on production with administrative responsibilities.

Responsibilities

• Support the Head Baker in the daily operation of the bakery.
• Lead, motivate, and develop a team of bakers through feedback and training.
• Coordinate daily production to ensure products are prepared efficiently and consistently.
• Maintain high standards of quality, food safety, cleanliness, and organization.
• Plan production schedules based on forecasts and needs.
• Monitor product quality and ensure consistency across batches.
• Assist with ordering ingredients and inventory management.
• Minimize waste through planning and stock control.
• Support administrative tasks including production planning, scheduling, and reporting.
• Ensure recipes and bakery standards are followed consistently.
• Foster a collaborative, positive, and respectful working environment.
• Open or close bakery operations when required.
