Job summary

Westdrift Manhattan Beach Autograph Collection by Marriott in Manhattan Beach, CA is seeking a seasoned kitchen supervisor to lead banquet and pantry cooks, ensure recipe adherence, and maintain sanitation across operations.

You will train cooks, supervise production, manage line setup, and enforce safety policies while partnering with the Chef to uphold quality and presentation across all service lines.

Qualifications

• One to two years required in supervisory role in a kitchen.
• Current Food Handler Card.
• Basic knowledge of food and beverage preparations and service standards.
• Knowledge of broiler cooking and sauté cooking.
• Understanding sanitation standards.
• Ability to read recipes and perform measurements.
• Basic English for instructions.
• Ability to operate kitchen equipment.

Responsibilities

• Supervise the cooks and cold pantry’s food production; verify use records and ensure quality presentation.
• Monitor line setup for maximum efficiency during meal periods.
• Enforce sanitation and the 'clean as you go' policy.
• Cross-train employees and train new staff on the service line.
• Assist the Chef in maintaining standards of quality and appearance on the front line.
• Prepare daily preparation lists for production.
• Read and employ math to follow recipes and measurements.
• Prepare broiled and sautéed items according to recipes and guest checks.
• Inspect and select high-standard ingredients and monitor storage and portion control.
• Keep logs for cooling, heating, and temperature; maintain neat areas.
• Adhere to company policies and safety rules; report unsafe conditions and incidents.
• Assist other kitchen personnel as needed.
