Job summary

Goodwin Recruiting is seeking an accomplished Chef de Cuisine to lead the culinary operation of an upscale, scratch-kitchen restaurant known for prime steaks, fresh seafood, and Mediterranean influences.

The role requires strong leadership, hands-on kitchen management, and collaboration with the Chef/Owner and Executive Chef. Relocation assistance to Tallahassee is provided, with relocation to Florida within 60 days.

Qualifications

• Proven leadership in upscale/scratch kitchen as Chef de Cuisine or equivalent.
• Strong experience with steaks, seafood, and scratch cooking.
• Mediterranean cuisine experience preferred and beneficial.
• Ability to lead and develop a culinary team.
• Understanding of kitchen financials including food cost, labor, inventory, and waste.
• Willingness to relocate to Tallahassee, FL within 60 days.

Responsibilities

• Oversee day-to-day culinary operations for a fine-dining dinner-service restaurant.
• Coach, train, and mentor line cooks and kitchen staff to build a professional kitchen culture.
• Collaborate with Executive Chef/Owner on culinary direction, menu development, and seasonal changes.
• Maintain high standards for flavor, execution, presentation, and sanitation.
• Contribute to menu ideas and culinary creativity with Mediterranean/international influences.
• Manage kitchen from a business perspective: food cost, labor, purchasing, inventory, and waste.
