Job summary

Jobtailor in the United States seeks an experienced production operator to manage Koji making, fermentation, pressing, and filling lines. You will monitor temperatures, pressures, and process parameters, ensuring data records and SOP compliance across multiple stages.

Ideal candidates have 1+ year experience in manufacturing, strong problem-solving skills, and familiarity with CIP, GMP/HACCP/BRC standards. Overtime and weekend work may be required.

Qualifications

• 1+ years manufacturing or equipment operation experience.
• Ability to read and interpret machine parameters.
• Strong discipline and ability to follow SOP.
• Ability to maintain accurate records.
• Able to lift 50 lbs and work in hot/wet environments.
• Basic English; bilingual preferred.
• Experience with koji machines, fermenters, pressing systems, filters, steam cookers, filling lines preferred.
• Experience with CIP systems preferred.
• Experience with GMP / HACCP / BRC preferred.
• Mechanical troubleshooting ability preferred.
• Must be able to work overtime, including weekends, as needed.

Responsibilities

• Independently operate production equipment across Koji Making, Fermentation Processing, Pressing/Filtration, Pasteurization, and Filling process areas.
• Operate cooking, steaming, mixing, pumping, conveying, material-handling, pasteurization, and filling equipment.
• Monitor temperature, pressure, speed, flow, torque, vacuum, and weight.
• Verify sensors, gauges, thermometers, and data loggers function correctly.
• Complete production, batch, sanitation, deviation, CIP, koji, fermentation, pressing, yield, and sanitation records.
• Perform CIP operations and maintain clean floors, drains, filters, mats, and equipment surfaces.
• Assist with filter cloth replacement, minor equipment adjustments, and component organization.
• Control koji room temperature, humidity, airflow, and mixing intervals; monitor koji development.
• Monitor fermentation parameters and conduct QA/QC sampling.
• Support material transfers from fermentation tanks to pressing.
