Job summary

Concord Hospitality Enterprises is seeking a hands-on kitchen leader responsible for training associates, ensuring quality and safety, and coordinating with management to maintain high standards across all outlets.

The role emphasizes adherence to brand recipes, accurate food preparation, and efficient production planning to minimize waste and maximize guest satisfaction.

Qualifications

  • Experience leading or training kitchen staff in food production and sanitation.
  • Strong knowledge of food safety regulations and compliance with federal, state, and local laws.
  • Excellent communication and coordination abilities with management and associates.

  • Trains all kitchen associates on job duties, including seasoning, production techniques, plate presentation, display, cleaning and sanitation.
  • Maintains open verbal and written communication between management and associates.
  • Participates in monthly kitchen meetings and inventory.
  • Ensures high-quality, properly prepared food is expedited to outlets smoothly.
  • Assists in establishing goals, standards, and objectives to improve profitability and reputation.
  • Takes safety seriously and adheres to all safety standards at all times.
  • Ensures proper staffing for the kitchen and avoids unnecessary overtime.
  • Tastes prepared items to ensure quality, consistency, and proper seasoning.
  • Ensures recipes are followed and storage/rotation standards are maintained.
  • Communicates problem areas with recommended alternatives to leadership for solutions.
  • Prepares food following brand recipe cards and proper documentation.

Job description

Responsibilities
  • Trains all associates in the kitchen how to perform their job duties to the best of their abilities, including proper seasoning, food production techniques, plate presentation, display work, cleaning and sanitation and all other areas that associates need to learn and grow in their position.
  • Keeps open verbal and written communication between the management and associates.
  • Participates in monthly department meetings, monthly kitchen inventory.
  • Ensures all food served is of high quality, properly prepared according to recipe and is expedited to all outlets in a smooth and efficient manner.
  • Assists in the establishment of goals, standards, and objectives, which will further the prestige and reputation of the organization as well as result in a more profitable operation.
  • Knowledgeable and practices food and liquor federal, state, and local laws and regulations.
  • Maintains all use records, daily position checklists, steak charts, roast meat charts, recipe cards, etc., at all times.
  • Ensures proper staffing of entire kitchen for adequate coverage without man-hours being wasted.
  • Physically tastes each prepared food item; soup, sauce, salad dressing, vegetables, etc., to assure maximum quality, consistency, and ensures proper seasoning. This must be done for all meal periods.
  • Ensures that adequate preparation is done for all meal periods, avoiding waste through preparation.
  • Ensures that approved recipes are followed at all times without deviation.
  • Ensures that standards pertaining to storage, rotation, production, portions, quality and appearance are followed at all times.
  • Communicates any problem areas with recommended alternatives to the Sous Chef, and Executive Chef / Food and Beverage Director for discussion and possible solution.
  • Prepare food of consistent quality following brand recipe cards.
  • Proper Documentation on all food containers with adherence to rotations per SOP.
  • Practice safety standards at all times
  • Report to work in full clean uniform on time and ready to serve.
  • Cook orders with adherence to guest requests/special needs in a positive manner
  • Be proactive with ordering and pars, food preparations and equipment upkeep to eliminate service obstacles.
  • This does not include all job duties.
