Job summary

Responsibilities

• Keep the dish room, plateware, and overall cleanliness of kitchen areas – including cleaning coolers, floors, equipment, tools, drains, and walls.
• Stock all plateware and silverware to all restaurant venues, maintaining par levels during peak business periods.
• Perform periodic maintenance and draining of the dish machine, de‑liming, and overall cleaning of the dish area.
• Empty trash bins, collect and remove waste from floors and work surfaces, separate recyclables, and properly dispose of grease.
• Supply dishware to food‑prep stations as needed; remove soiled dishware and cooking equipment from those stations.
• Keep work area (floor, machine, shelving, carts, etc.) clean at all times.
• Perform miscellaneous duties such as polishing silver, working in storeroom, and preparing for banquets or special events as assigned.
• Maintain organization and ensure proper rack stacking, silver presoaking, and operation of the dish machine.
