Job summary

Wake Forest University seeks an experienced culinary manager to oversee daily kitchen operations, ensuring quality and creativity in food production. You will manage production lists, inventories, and equipment, while upholding sanitation and safety standards.

Qualifications

  • Associate’s degree in Culinary Arts with at least two years in a culinary management role in fine dining or production
  • Knowledge of food handling, safety and sanitation for a commercial kitchen
  • Experience with high-volume production (buffet, private dining, or conference dining)
  • Familiarity with professional kitchen equipment, maintenance and care
  • Knowledge of inventory control, ordering, and supplies management
  • Awareness of current culinary trends and strong presentation skills
  • Commitment to health, sanitation, and safety standards for food service production
  • Professional demeanor, excellent verbal and written communication, and strong interpersonal skills
  • Ability to work a flexible schedule including nights and weekends
  • Ability to meet university automobile insurance requirements

Responsibilities

  • Oversee daily production following prescribed recipes and maintain quality standards
  • Assist with inventories, cost controls, requisitions, and issuing supplies/equipment
  • Supervise kitchen staff in absence of Executive Chef
  • Support menu planning, sanitation, safety and daily production tasks
  • Prepare and fabricate meats and fish; maintain clean work areas and equipment
  • Maintain high standards of health, sanitation and safety for staff and guests
  • Recommend maintenance and upkeep for kitchen and equipment
