Responsibilities

• Ensure kitchen staff follow all policies, including food preparation guidelines.
• Order supplies and monitor inventory to keep shifts stocked.
• Schedule shifts to keep operations running smoothly.
• Lead back-of-house meetings and trainer meetings as needed.
• Train cooks and other workers in preparation, cooking, and presentation to Via 313 standards.
• Monitor training and discuss progress and goals with trainers.
• Maintain quality control and food safety procedures.
• Enforce temperature controls and keep logs up to date.
• Supervise and coordinate activities of cooks and kitchen workers.
• Maintain back-of-house facilities and equipment to uphold safety and cleanliness standards.
• Communicate with General Manager when standards cannot be met.
• Oversee product orders and received goods.
• Control food cost and usage via proper requisition, storage, recipes, and waste control.
• Perform other duties as required by upper management
