Pioneer Crossing Casino in Dayton is looking for an Executive Chef/Kitchen Manager!

This individual will be part of the Culinary Team for Pioneer Crossing Dayton, Gold Ranch Dayton, and Silver Strike casinos. The primary function of this role is to support and elevate current programs, improve financials, stabilize complex operations and drive Truckee initiatives. This role will provide culinary leadership and direction to all kitchen employees to produce the highest quality food with precision and accuracy, continually observing and implementing the proper quality assurance and food-safety procedures.

Requirements

Prior experience as a Kitchen Manager, Sous Chef is required.

Essential Job Functions:

  • Orientates new Chefs within their respective Core Culinary Standards, and established food programs.
  • Culinary Lead for new account openings and or renovations within the territory.
  • Assists with training, coaching, and development of culinary personnel within assigned territory and other territories as needed.
  • Is comfortable and familiar preparing food in a regulatory environment.
  • Manages all administrative responsibilities associated with culinary standards & programs, purchasing compliance, waste management, wellness, and all other Truckee compliance programs.
  • Comprehensive knowledge of all the components contributing to food cost control.
  • Review food production practices in each account for efficiency, quality, and safety.
  • Evaluate kitchen organization and flow for safety and efficiency; make corrections as needed working with the chef and manager.
  • Evaluate Food Purchasing in each account to make sure that company specifications are being followed
  • High School level math.
  • Knowledge of chemicals, sanitation and ware washing techniques and procedures.
  • Effectively and courteously interact, communicate and cooperate with coworkers in kitchen and dining room to ensure quality customer service and keep up kitchen standards.
  • Maintain clean appearance and practice good personal hygiene in accordance with the state /governmental health agency rules and requirements.

Work Environment and ADA Requirements:

Must be able to stand and exert well-paced motion with full range of mobility for up to 4 consecutive hours. Must have ability to bend, squat, climb, walk, see clearly, and hear well. Ability to occasionally lift up to 50 lbs. and push 250 lbs. carts, as well as frequently carry and lift food trays/items of up to 30lbs. throughout shift. Must be able to operate within confined spaces and perform acts of repetitive motion. Must be able to stoop, bend and reach. Must have the manual dexterity required to write and operate computer. Must be able to listen and respond to visual and aural cues. When on casino floor, must be able to tolerate areas containing secondhand smoke, high noise levels, bright lights and dust.
