Job Title: Jr. Sous Chef

Pay Rate: $20.63 /hr

Job Summary:

As a member of the culinary team, this position prepares and presents all menu items. Will assist the Chef de Cuisine and Sous Chefs in daily responsibilities to include ordering, line management, execution of menu items, and managing a staff of 10-20 employees daily. To follow direction of the Executive Chef, Chef de Cuisine, and Sous Chefs in maintaining the highest standards of food quality, taste, and production. To follow the standards set in place as a manager at the hotel.

Essential Duties and Responsibilities include the following and other duties may be assigned:

• Experience with operating, maintaining, and cleaning necessary machinery.
• Proceeds in preparation of all menu items in assigned area daily.
• Precisely follows portion control, presentation of food, consistency of food, and flavor as determined by the culinary department.
• Checks coolers for proper rotation of food items to prevent spoilage.
• Ensures adequate amount of product is on hand and lets supervisor know what to order.
• Takes required breaks, notifying supervisor prior to leaving station.
• Prepare all items as specified in areas working in.
• Maintain a clean, organized, and sanitary work area following safety guidelines.
• Follow all hotel and kitchen policies and procedures.
• Advise chef when food inventory is depleted.
• Must be able to understand and adjust recipes according to business levels.
• Maintain a working knowledge of properly storing, rotating, and maintaining products.
• Must be able to maintain ServSafe and health department standards.
• Maintain comprehensive preparation and knife skills.
• Ability to check and complete mise en place and pars to set-up the station.
• Ensure production of food in a timely manner.
• Prepare food so that quality, taste, and appearance of food is in accordance with Broadmoor standards.
• Control proper usage and rotation of food.
• Ensure food quality and appearance is in accordance with Broadmoor standards.
• Alert Chef or direct supervisor to any food quality issues that could have an adverse effect on Broadmoor Resort culinary operations.
• Maintain walk-in coolers and food storage areas daily.
• Ensure workstation and all equipment is clean and sanitized prior to the change of shift.
• Ensure outlined prep is completed in a timely manner for the next shift.
• Make sound judgment calls and decisions based upon principles set forth by The Broadmoor culinary management team.
• Highly responsible & reliable.
• Ability to work well under pressure in a fast-paced environment.
• Ability to work cohesively as part of a team.
• Ability to focus attention on guest needs, always remaining calm and courteous.
• Must be able to run a station independently.

What we are looking for:

• Valid Driver's License is required.
• Any employee driving a Broadmoor vehicle must be 18 years or older.
• Education: Apprenticeship or culinary school graduate; at least one year of experience in a full-service culinary position preferred.
• While performing the duties of this job the employee is regularly required to stand; walk; run. The employee may be required to run between 1 mile and 12 miles during a given shift.
• The employee is occasionally required to lift/pull/push up to 50 pounds.
• Enthusiastic, friendly, and energetic team member who works well with others.
• Strong interpersonal communication skills.
